Tzatkiki is Greek staple traditionally made with strained yoghurt. It is served as an appetiser or as a side to vegetable and meat dishes.
1 cup yoghurt of plain choice (Greek, coconut)
1 cucumber, grated (approx. 2/3 cup)
2 garlic cloves, minced
1 tbsp chopped mint
2 tsp lemon juice
Pinch of lemon rind (optional)
¼ tsp salt
1 tsp oil (olive, hemp)
In a small mixing bowl combine yoghurt, cucumber, garlic, mint, lemon and salt.
To serve add a drizzle of oil.
