Tzatziki

Tzatkiki is Greek staple traditionally made with strained yoghurt. It is served as an appetiser or as a side to vegetable and meat dishes.

INGREDIENTS:

  • 1 cup yoghurt of plain choice (Greek, coconut)

  • 1 cucumber, grated (approx. 2/3 cup)

  • 2 garlic cloves, minced

  • 1 tbsp chopped mint

  • 2 tsp lemon juice

  • Pinch of lemon rind (optional)

  • ¼ tsp salt

  • 1 tsp oil (olive, hemp)

METHOD:

In a small mixing bowl combine yoghurt, cucumber, garlic, mint, lemon and salt.

To serve add a drizzle of oil.
