Adzuki Bean Brownie w Peanut Butter

  • 2.5 cups adzuki beans (cooked and drained)

  • 2  eggs

  • 2 Tbsp coconut oil (melted)

  • 1 cup cocoa powder 

  • ½ cup coconut or maple syrup

  • 1 1/2 tsp baking powder

  • 1 tsp vanilla extract

  • 1/2 cup peanut butter


METHOD: Preheat oven to 175 degrees celcius. Combine adzuki beans, eggs, cocoa, coconut syrup, baking powder, vanilla in a food processor until smooth. Spread mixture into a lined 20x20 baking tin (or 20 x 30 for a thinner brownie). Dollop peanut butter on top of the mixture, swirl using a skewer. Bake for 20-25 minutes.
