Hemp Heart Pesto
Hemp seeds, also referred to as hemp hearts are technically a nut. They have a mild, nutty flavour, in my opinion, reminiscent of a pine nut combined with a sesame seed. They are a rich source of essential fatty acids, linoleic acid (omega-6) and alpha-linolenic acid (omega-3). Hemp hearts are also a great source of high-quality protein.
I absolutely love pesto with roast veggies or pasta, on a platter, with a nourish bowl, as a dip- the possibilities are endless. This recipe is a great way to get in some healthy fats and protein as well as a good dose of greens. Even better it's a good way to use up any sad green vege and reduce food wastage. My rocket was starting to wilt so I turned it into this vibrant pesto- you could use kale or spinach or any herbs. Yumm!

1 garlic clove
1/3 cup Hemple raw hulled hemp seeds (can substitute your prefered nut or seed )
1 cup, tightly packed rocket or basil (or any greens)
1/3 cup Parmesan (I used the Plant-Based “Parmesan” from my blog)
½ lemon, juiced
1/3 extra-virgin olive oil or Hemple cold pressed hemp seed oil
Pinch of Celtic sea, Himalayan salt
Method: Add all ingredients to a blender and blitz until creamy.
