Raw Black Forest Slice
A nutrient-dense, whole-foods adaptation of the German classic. I've switched the cherries, chocolate, and cream for an antioxidant-rich berry blend and raw cacao with a creamy cashews and coconut.
I always use Niulife coconut oil when I make raw treats. - 3/4 cup almonds
- 3/4 cup oats
- 1/4 cup Bareblends Raw Cacao
- 10 Medjool dates (pitted and soaked overnight)
- 1 tbsp water
- 1 cup Niulife desiccated coconut
- 1 ½ cups cashews (soaked overnight)
- 2 tbsp maple syrup
- 2 tbsp Bareblends Bare Berries
- 1 tbsp Niulife coconut oil, melted
Add almonds, oats, and cacao to a food processor and blitz until flour-like. Add dates and water and process until mixture forms a dough. Press base into a lined, 20x20cm baking tin and place in freezer for 20 minutes or until firm. Combine cashews, maple syrup, and coconut in a food processor. Remove 1 cup of the filling mixture and press onto the base and place back in the freezer for 20 minutes or until firm. Add bare berries and coconut oil remainder of filling mixture. Press on top of the first layer. Combine coconut oil, raw cacao, and maple syrup and smear over the top of the berry layer- you’ll need to work quickly as it will set.
