Easy Reishi Raw Vegan Chocolate
Reishi mushroom (Ganoderma lucidum) is one of the most famed tonic herbs of all time. It has been used in Traditional Chinese Medicine for thousands of year to reduce stress, promote longevity, strengthen the immune system, increase energy and support healthy aging. Reishi is known as a tonic for elevating the spirit (Shen) and promoting mental well-being, calmness and cultivating peace, love and happiness. Sounds like exactly what I need so got my hands on Teelixir an Aussie brand who make certified organic medicinal blends. I’ve been adding it to my morning cuppa and absolutely love it but I decided to try something a little bit different today so here is a recipe for an easy-peasy Reishi raw chocolate.
I always use Niulife coconut oil when I make raw treats. Easy Reishi Chocolate
2 mins prep time // 30 min chill time
1/2 cup natural peanut butter
1/4 cup Niulife coconut oil, melted
1 tbsp honey/rice malt syrup/ Niulife Coconut Nectar
3 tbsp raw cocoa
2 tbsp almonds, crushed
Pinch of salt
1. In a medium sized mixing bowl combine peanut butter, coconut oil, honey/rice malt syrup, raw cacoa, Reishi mushroom powder, and salt.
2. Pour the mixture into a silicon or loaf tin lined with baking paper and sprinkle crushed almonds on top.
3. Place in the fridge for 30 mins to set.
4. Cut into 8-10 pieces and store in fridge.
