Plant-Based Protein Cookies
Buckwheat, not actually "wheat" is a seed which is used as a gluten-free grain. Not only is buckwheat a good source of fibre but it also is a great source of protein with all 9 essential amino acids.

- 1 cup buckwheat
- 3/4 cup buckwheat flour
- ¼ cup Bareblends Vanilla and Coconut Protein
- 3/4 cups desiccated coconut
- 1/4 teaspoon Celtic sea or Himalayan salt
- 1/3 cup Niulife coconut oil, melted
- 1/3 cup Niulife Coconut Nectar or rice malt syrup
- 1/3 cup tahini
Dark Choc Drizzle
- 1 tbsp cacao butter, melted
- 1 + 1/2 tbsp cacao
Preheat oven to 150°C and line a baking tray with baking paper. In a large bowl combine buckwheat, buckwheat flour, vanilla protein powder coconut, and salt. Then add coconut oil, rice malt, and tahini. Shape into twenty cookies and place on the lined baking tray in the oven for 25-30minutes. Melt cacao butter using a double boiler over a low heat, add cacao powder. Once cookies have cooled drizzle chocolate over the top. Once set store in an airtight container.
