Easy Mac-no-Cheesey

So this is my nutritionist take on Kraft’s Easy Mac.  Remember that stuff? Probably at about 4am after a night on the town, in front of the TV in your jammies or a lazy student lunch? Cheesey macaroni, comfort food at it’s finest. This recipe gives you the cheesiness, creaminess and (maybe?) nostalgic yellow colour without the bellyache and ingredients you can't pronounce.  Admittedly, it’s not quite as simple as it’s microwavable forefathers- but it’s worth it.

INGREDIENTS

  • 250g Gluten free macaroni

  • 1 cup raw cashews (soaked 4-6+ hours)

  • 1 tsp Himalayan/Celtic salt

  • ½ tsp mustard powder (optional)

  • 2 tsp olive oil

  • ¼ cup nutritional yeast

  • ½ tsp turmeric

  • 1 onion, medium

  • 1 carrot, medium

Optional to serve

  • 1 pinch paprika

  • 4 handfuls baby spinach

Serves 4 as a side or a snack

METHOD

Steam onion and carrot and cook until soft. Cook the macaroni al dente as per cooking instructions (approx. 6-8 mins).  Place cooked onion and carrot in a food processor along with ¾ of a cup of water, cashews, salt, mustard powder, nutritional yeast, olive oil and turmeric.  Blend until smooth. Combine sauce with cooked macaroni and sprinkle with paprika and baby spinach
