Pear, Walnut + Rocket Salad



Like most of my recipes, this salad is hardly even a recipe because it’s that easy. It’s so simple and divine dressed in my go-to dressing of olive oil and lemon juice. Not only does the lemon provide a kick of freshness but it’s vitamin C content stops the pear from browning by inhibiting oxidation.


Walnuts are honestly one of my favourite nuts to include in my diet.  Add them to salads, crush them up in your brekky or snack on a handful with a piece of fruit. They’re delicious and super nutritious.  They’re a wonderful source of protein, manganese, copper, magnesium and most importantly Omega-3.  

Walnuts look like tiny brains, they’re two crinkly halves enclosed in thick husk but instead of gray and white matter we find a powerhouse of nutrition. Walnuts actually support brain health due to their neuroprotective compounds including omega-3, vitamin E, folate and antioxidants.

Serves 2


  • Two cups of rocket 1 pear sliced thinly
  • 1 large handful of walnuts
  • A pinch of nutritional yeast (optional)
  • Juice of 1/2 lemon
  • 1tbsp olive oil
  • Salt and pepper to taste


In a bowl add rocket, pear, and walnuts. Dress with olive oil, lemon, salt and pepper. Finish with a pinch of nutritional yeast.
