Broccolini + Cherry Salad w Feta + Pepitas
300g broccoli (approx. two bunches)
1 handful of pitted cherries
2 tablespoons pepitas, toasted
50g crumbled feta
1 handful mint leaves
2 tablespoons olive oil
1 tablespoon apple cider vinegar
2 teaspoons honey
Method: Steam broccolini for 4-5 minutes or until tender. Immediately put the broccolini into an ice bath or cold water (this will stop it from continuing to cook and maintain the vibrant colour).
Assemble broccolini, cherries, pepitas, feta and mint leaves. For the dressing combine olive oil. apple cider vinegar and honey and drizzle over the salad.
