Lemon Coconut Balls

 

INGREDIENTS

  • 1 cup desiccated coconut
  • ½ sesame seeds
  • ½ cup almonds
  • 2 tbsp honey or ricemalt syrup
  • juice of 3 lemons
  • zest of 1 lemon (preferably organic)
  • ½ cup coconut oil

METHOD

Add all ingredients to a food processor. Blitz for 30-60seconds or until well combined.  Place a tablespoon of the mixture into your hand roll into a ball and repeat with all of the mixture.  Roll the balls in desiccated coconut and place on a plate. Refrigerate for 30-minutes or until firm before serving. Store in the fridge or freezer. 

*If you substitute almonds for almond meal or finely chopped almonds this recipe can be mixed by hand.
