Goodness Loaded Overnight Oats

When I discovered overnight oats it genuinely changed my life! Between university and work I was struggling for time in the mornings to get in a nourishing breakfast.  Overnight oats were a total game changer, a blessing, my saviour.  A few minutes the night before whipping these together can make a huge different the next day.  These are an absolute favourite and can be adapted easily to suit personal preference- try different seasonal fruits, nuts and seeds, shredded coconut, cocoa nibs- the possibilities are endless.  Try making it in a jar to have on the go!

Soaking our breakfast overnight not only saves us time but actually makes it easier to digest.  I absolutely love oats because of their  Beta-glucan (soluble fibre) content.  Beta-glucan fibre reduces LDL and total cholesterol levels, helps with blood sugar balance and insulin response, provides a feeling of fullness and provides a fuel source for the beneficial bacteria in our digestive tract.  Chia seeds make the perfect addition to a nutritious breakfast because they are bursting with soluble fibre, complete protein and omega-3 fatty acids.  When our nourishing breakfasts are rich in fibre, protein and healthy fats they keep us satiated and and fuller for longer. 

Serves 1 // 5 mins prep


  • 1/3 cup of oats

  • 1 tbsp of your favourite nuts and seeds, roughly chopped

  • 1 tbsp of chia

  • 3/4 cup of your preferred milk or water

  • 1/4 large of apple, grated

  • 1 pinch of cinnamon

  • 1 tbsp of yoghurt, to serve

  • 1/4 cup of berries


1. Combine the oats, nuts and seeds, chia seeds, milk or water, grated apple and cinnamon in a bowl or jar.

2. Set aside over night in the fridge.

3.  Add the yoghurt and berries to serve.
