Easy Peasy Chia Seed Pudding
Chia seed puddings have been a long standing favourite in my household. I say this about a lot of things, but chia seeds are a nutritional powerhouse! Chia seeds make the perfect base for a nutritious breakfast because they are bursting with soluble fibre, complete protein and omega-3 fatty acids. Foods rich in fibre, protein and healthy fats keep us satiated and aid in blood sugar balance. A nourishing breakfast that leaves us fuller for longer may reduce cravings for sugar-filled nasties and quick fixes like coffee and energy drinks.
Chia puddings are perfect for the time poor. When I was at uni they absolutely saved me. They can be prepared ahead of time in jars and are perfect for on the go. If you're feeling adventurous try different bases like green tea or coconut water. Play around with your toppings such as seasonal fruits and nuts, seeds, shredded coconut, granola the possibilities are endless.
